Usually frostings are chosen due to design constraints of the final finish of the cake. Generally a White or colored vanilla butter cream is used for most decorating purposes. Alternative cake covering are: Poured chocolate ganache*, Poured almond fondant*, Rolled vanilla fondant*, Chocopan* (a rolled chocolate fondant), and Poured caramel.* Decorations may be of butter cream, Fondant*, chocopan*, gumpaste*, royal icing, or chocolate. Fresh flowers may be used on request*.
